Stella, how funny...I made this last night too with a side of snow pea pods. My guys were scarfing it down. I'm having the leftovers today (for lunch and dinner). It's one of my favorites.

We made this recipe Monday and used it for leftovers for lunches too! YUMMY! It was even better reheated.

Okay. All I can say is HOLY COW. This recipe was friggen awsome. And, I must say it is recipes like this that make it easier to be successful on atkins....So damn delicious...having the rest tomorrow for lunch and dinner.

is green mexican salsa the same as green enchilada sauce? I'm making this tonight unless we go out for halloween dinner with the kids. the brand I use has three grams of carbs per 1/4 cup.

I made this with 1/2 cup green enchilada sauce instead of green salsa. It was divine.. I'm glad I divided up the portions in containers before I started to eat it otherwise I could have potentially eaten it all!!!!!!!! YUMMY!!!!!
