    Craving Mexican Food? Here you go........

    Beef Enchiladas
    1 lb. ground round
    1/3 cup diced onions
    1 1/2 cup of favorite shredded cheese (I used a mexican mixture)
    10 oz can enchilada sauce
    12 LaTortilla Factory Tortillas (I used whole wheat)

    Brown ground round and add in onions. Drain when thoroughly cooked. Stir in 3/4 cup enchilada sauce and 1 cup cheese.

    Spoon enchilada filling onto tortillas. Roll up and place seem side down in lightly greased 13x9 inch baking dish.

    Pour remaining enchilada sauce over top and sprinkle with remaining 1/2 cup cheese.

    Bake at 375 for 15 to 20 minutes.

    Only 4.75 carbs per enchilada.

    (Basically this is the same recipe as on the can of Old El Paso sauce - except you use low carb tortillas!)

    I love Mexican and have missed enchiladas.

    I've tried the tortillas (cold w/tuna) and was not thrilled with the consistency. Does cooking them help?

    I'm going to try this, it sounds good!

        I just tried these last night! They were great, and so easy to make! I'll be having them again this weekend. Thanks for the recipe, I'll definately keep this one! :joy
