  • The Kabitat Omelette

    This is an omelette I created when I first went on the Atkins Diet, and have it every morning. Friends swoon and non-dieters cant get enough of it. Safe to say, once you try it, you will keep wanting more and more. Please try this one out. I usually have it in the mornings when I need a bulky breakfast and use four eggs. If Im doing dinner, I use six eggs and have two dinners, about an hour apart!

    Ingredients:

    4 Eggs
    50 grams crunchy fried bacon
    50 grams polish kielbasa, finely chopped
    2 tbsp soya sauce
    Salt to taste
    Pepper to taste
    100 grams mushrooms
    Sprig spring onions, finely chopped
    2 cloves garlic, minced
    Olive oil
    Shredded roast/boiled chicken, 1/2 cup (yes, a lot, but do use it)
    50 gms boiled cauliflower, mashed
    4 slices cheese (kraft is good)

    beat the eggs along with the cauliflower, soya sauce, bacon, kielbasa, salt, pepper, garlic. Heat a pan with 4 tbsp olive oil and use medium heat. When the oil is hot, pour the egg mixture in and cook on a low flame with lid closed for about three minutes. Open the top, and add the chicken, mushrooms, in a layer on top, and spread the 4 cheese slices over. Close for another two minutes. Personally, I like cooking this longer as the bottom of the egg gets really crunchy. Turn the flame off, and let sit closed in the pan for at least another two minutes.

    Slide this onto a plate and serve hot. It is AMAZING.
