  • ceviche

    this is my favorite appetizer enjoy! it is induction legal ...and can be served at a party as a passing food!....you can serve with some crackers for those who are not on Atkins or I eat it just in a bowl or with romaine leaves

    1 pound of very fresh dense fish like a good cod, mahi mahi, tuna, fresh wild salmon (farm raised is too fatty), squid or even shrimp
    2/3 cup very fresh lime juice
    1/2 teaspoon salt
    1 finely dice habanero (tip hold the pepper with your fork and dice it that way or wear gloves...I use my fingers but then rub lime on my hands to get the hot off...never forget you have chopped a habanero and then go to the bathroom, touch your face ect :yikes :yikes :yikes )
    salt and fresh cracked pepper
    you can toss a handful of fresh chopped cilantro just before serving....
    also I will add some seeded fresh chopped tomatoes for a kind of Mexican seafood cocktail

      try the ceviche on sliced jicama!!! it is so good!!!!

            scallops

            a bit pricey but really good for this...also I like squid the great big fat ones sliced in strips and ceviched if that is a word?

                i toss cooked shrimp - large and small, crab meat, lobster, fish ... lemon juice, chili powder, salt, pepper, garlic powder, avocado, cilantro, green onion, tomato, serrano chile. chop everything up and place it in the fridge to marinate. not sure what the carbohydrate count is, but it's very good - even without tortilla chips.
