Approx. 5-6 cups of chicken cooked and cubed
1 small can chopped green chilis
1/4 onion (optional) diced and sauted in butter
8 oz Montery Jack Cheese cut in med sized pieces
3 cups Heavy whipping Cream
1/2 sitck butter
Approx. 9-10 Low Carb Tortilla Wraps
Sauce: Melt butter in sauce pan. Add onions and saute 1 to 2 minutes. Then add heavy whipping cream, green Chilis & Montery Jack Cheese. Add some salt and pepper and Garlic to taste. Cook until the cheese is melted. Let simmer while wrapping the enchiladas. Sauce will look thin but it will thicken after it is cooked and cooled before eating.
If you know any way to thicken it low carb you can do it.
Put chicken in the middle of wrap and roll up. Place seam side down in a
9x13 greased casserole dish.
Pour sauce over the wraps and top with some extra grated cheese and bake for 30 minutes @ 350 degrees or until the cheese on top is browned.
Each enchilada has approx 4.5 carbs.
I made this recipe up myself. I am alway looking for new recipes.
You can top with quacamole,sour cream, tomatoes, lettuce on top. But these things are not added in the total carb count.
This is so easy and delicious. My husband said that he feels like he is cheating when he eats it, because it is soooo delicious!!!
I would love to have some feedback on this recipe if anyone tries it.
