  • mock cream cheese Danish

    This is a custom fit job.

    use 1-2 eggs
    1-3 ounces of cream cheese
    1-2 packets of sweetner of choice
    flavor of choice I use anything from 1/4t cinnamon, 1/4t extracts, and even chili powder if I make a lunch one. You can leave out the sweetener and use herbs for a savory one to go with a salad.

    you can hide some flax seed meal 2-3T in here for added fiber if you need it or want it.

    soften the cream cheese in a microwavable bowl in the microwave for 15-20 sec.

    Mix flavor and sweetner into the cream cheese if you want icing take out some of the mixture.

    add egg and flax if using. mix leaving a little lumpy.

    nuke 1-3 min depending on your microwave and how dry you want it.

    Ice if you wanted too and eat. Be careful not to burn your mouth as it is hot. it will be more bread like if you use the flax seed meal.

    carbs are
    .6 per egg
    1 per packet of sweetener
    depending on cream cheese brand 1 or 2 per ounce used.
    flavorings carbs will depend on what you use.
    flax seed meal carbs for 2T is .78 net carbs on fitday.

    edited to add Remember inductees you have a daily limit of 3 sweetener servings a day and your syrups,and packets each count as one so don't use up the whole day making breakfast.

    Well, for those of you who haven't tried this... I thought it was fantastic! I made mine with 2 oz cream cheese, a squirt of lemon juice, and only 1 egg but mmmmmmmmmmmm. I thought I had died and went to Atkin's heaven! Thanks 2big for sharing. I am going to pass it along to my non atkins BB friends.

          I made this for breakfast this morning and it was delicious. I used 2 oz. cream cheese, one egg, some cinnamon, and a packet of Splenda. What a treat!

            I made this as the recipe specified. It was okay, but to eggy. So, I have modified it by adding 1 tablespoon of the Atkins Bake Mix. It adds a carb, but it really improves the texture of the egg, making it more danish like.

                the flaxseed meal does the same thing and gives you fiber too without the carbs.

                  Okay, I have made these with flax meal, Atkins Bake Mix, AND psyllium HUSKS ( Not the Powder). I put 1 tablespoon in with the egg.

                  I liked the psyllium HUSKS the best. Next time though, I will try it with a half tablespoon.

                  Really good way to get your fiber.

                    tried these last night. WOWSER. did put me a couple carbs over, at a net of 24 for the day. but no complaints!

                      Light headed after egg dish.

                      I made the dish above using 3 ozs. cream cheese, two packets of Splenda, a dash of cinnamon and an egg. I was happy with the change in taste, but I found myself feeling a little light headed afterwards. Could it be the Splenda? Anyone had any trouble using it before?

                        how far a long on the plan are you? Are you taking the suggested vitamins and calcium, magnesium and potassium supplements? Has it gone way? Are you on Blood pressure meds? this WOE has a natural diuretic effect that will lower your BP and if you are on meds for it it can get too low and make you light headed.

                          I know this thread is old, but I JUST tried this recipe with 1 egg, 2 splendas, and 3 oz. of cream cheese. Not only did I like it, I had to give 1/2 of it up to my 2-year-old, hence having to make another one! (Trust me, I didn't mind!) I REALLY thought it would be gross. I've been lurking here for awhile and just registered last month and I thought, "I would NEVER try that!" But my breakfast was late this morning and I needed something quick.

                          It hit the spot. Sorry for doubting you, 2big!

                          BTW, I topped mine with SF raspberry preserves. 5 grams. TOTALLY AWESOME!

                            Alright...I didn't like flaxmeal in flax cakes OR the flax cereal, but I tried this recipe w/1t. vanilla ext., 1/2 t. cinnamon and 1-1 1/2 T Flaxmeal, 1.4 oz. of cream cheese and 1 packet of stevia. MMMMmmm...THIS is a very tasty rendition of a "danish." I must say it is quite good!

                              Okay, add me to the ranks of Mock Cream Cheese Danish lovers! Although I could not imagine how this was going to turn out, I gave it a try this morning using 2 oz. cream cheese, one egg, one packet of Splenda, 2 T. flax seed meal, and a little cinnamon. It was delicious (and very filling, too)!
