  • Mexican Chicken Stew

    Mexican Chicken Soup
    In a very large pot
    Boil 3 chicken leg quarters and bone it toss back in the pot.
    3 carrots (for my husband and son)
    3/4 a head of cabbage chopped
    1 green bell pepper chopped
    1/2 can of rotel (diced tomatoes with green chilis WalMart brand has no added sugar, didn't check the others)
    salt
    pepper
    garlic
    chili powder
    paprika
    and 5 minutes before it is done a handful of cilantro.
    (also tasty in it is zuchinnni but don't add it until the last 15 minutes or so, it will cook and dissappear any earlier)
    (If you would like to make it spicy add 1 to 3 jalepenos)
    I did do extra heavy on the chicken with some cabbage and bell pepper, and will avoid the carrots.Figuring about 5/6 net carbs per bowl
    restart 16-18/8-12 (crazy sizing)/love to get into some 6's

    sounds great

    hmmm I have chicken and peppers...well most of the ingredients...I have collards and kale in the garden I wonder if this could be used for the cabbage....I have chiles and tomatoes maybe I can just make my own Rotel! I am going to make this for dinner tonight! thanks for the idea!!!

      I do something similar to this but it has to have onions, and red pepper flakes. Then I add the seaweed nurselady turned me on to! But I have had it with kale as well, works fine!
