  • Taco Salad

    This has become a weekly staple for me. I LOVE it.

    Romaine lettuce chopped up (a cup of so)
    Tomatoes- I quarter smaller maters (a cup)
    Onion- I dice a few ounces
    Cheddar cheese- I use sharp and shred my own, an ounce or so
    Black Olives-couple Tablespoons or so. sliced up
    Hot Sauce- (franks, I also use the chili lime hot sauce from them)
    Sour Cream
    Ground turkey

    I assemble everything while the turkey (or beef, your choice) is browning saving the hot sauce, sour cream and part of the cheese. when the turkey is nearly done, I addin hot peppar flakes, cayenne and a dash of Franks and the remainder of the cheese.

    When the meat is done I dump it on top of the salad, add more Franks, salsa if I want it and sour cream. All the HEAT from the spices mixed with the cool of the sourcream is the perfect combo.

    Your mileage is going to vary dependingon your ingredients and amounts so figure your own carb/nutrition counts on fitday. This completely fills my NEED for mexican food. I used to live on chips and salsa, with this, I dont miss the chips at all because teh lettuce and the onion give me crunch that I want.

    This sounds great! The ingredients are going right on my shopping list. I just hope if I buy a whole onion it won't go to waste (I'd have to make a LOT of faux salsa to eat a whole onion.)

      I always have onions on hand now.... for the ones that I dont think I will useon time, I dice them up and then freeze them. if you dont use a lot at a time, freeze them in little ice cube trays and you will have enough to grab one "cube" without wasting a whole bunch. (once they are frozen, they can be popped out and put in a vaccum saving bag or a freezer bag or whatever you prefer. I also have bags full of chopped onion. enough for a batch of soup or a roast. I toss the bagful (about half an onion) in my roasts for flavor etc.

      You can also grab those little green onions in small bunches if you dont want the hassel of freezing.

        Yep, put them in the freezer! I keep diced onions and green peppers in the freezer so its easy to just grab them to throw in dishes when I'm cooking during the week after work! I do the same thing with celery, I dice up the whole bunch of it and freeze it, that way I don't have to worry about it going bad before I use it all!

            What about adding cilantro? DH and I love it and I can't remember if it is allowed, being a type of parsley I can't see why not. That to me says mexican all the way! Thanks for the recipe. I am definetly adding to the menu this week. I, too, loved the chips and salsa....

              I love making taco salads! We usually have them at least once a week. One thing you can add to the ground meat to make it taste more like the packaged taco seasoning is ground cumin - it adds a great smokey flavor.

                Oh man, I eat this at least 3 times a week. I made one for my non-LC friend one time and she said "i can't believe you're losing weight eating this - it tastes so good!"

                  I am the same way with onion, but I found them frozen in the freezer section of the store yesterday. I also found frozen bell peppers the same way so I think it will be easy to use them now.
