  • Anglo-Saxon Chicken Stew

    Heya,

    I was browsing around Margarita's Internation Recipes - http://www.marga.org/food/int/ (which is a great site btw, check it out to get inspired for some stuff), and I came upon a recipe that looked like it could be made Atkins friendly very easily. Here is my adaptation:

    3 Chicken Breasts (bone in, skin on)
    1/2 Large Onion
    3 Cloves Garlic
    1/2 lb of mushrooms
    4 slices of bacon, chopped
    1 bottle of low-carb beer
    1 can of chicken broth (or 12 ounces stock)
    3 tablespoons or so of butter
    Swiss cheese, grated
    Bay Leaf
    Thyme
    Celery Salt

    Chop the onions, smash the garlic, chop the bacon, and let it all start to brown a bit in a pot with several pats of butter.

    Once the onions start to get a bit browned toss in the chicken breasts, skin side down, and let them continue to cook until they start to brown as well.

    Add the bottle of beer and the can of broth, as well as the spices and mushrooms.

    Turn down heat to low and let this simmer for about 30 minutes until it cooks down a bit and the broth reduces.

    To serve: Put a breast in a deep bowl, ladle some of the sauce/mushrooms over it, grate some swiss on top, and put under a broiler until the cheese melts, enjoy.[/url]
