  • Broiled cod with Parmesian

A simple dish that is delicious!

    Cod
    Parmesian Cheese
    Salt
    Pepper

Take your cod and sprinkle lots of parmesian cheese on top and then salt and pepper to taste. Broil it in the oven until golden and then turn over sprinkle more cheese and salt and pepper and broil the other side. Cod cooks quickly so watch it closely.

I serve this with Maries Piquant Tartar Sauce that has 1 Carb for 2 Tbs. It is the BEST tartar sauce I have ever had as well.

You can use this fish on the induction phase and it has no carbs.

This is one way to get even your non-Atkin family members and children to eat fish. I have not found one person that does not love this.

Have you ever tried the chicken recipe where you mix parmasian cheese (the Kraft kind) and mayonaisse and spread over chicken breasts and bake? I bet that would be good on fish too. In fact I just remembered I did it to Salmon once and it was really good. The mayonaisse and cheese kind of puff up and makes a crust. Sounds weird but is really good.
