WOW! Sounds fantastic. Top with sour cream, shredded lettuce, and guac. Yum!
June Goals
1. Continue with water
2. Use bike more (3x per week would be nice).
3. Continue with videos.
4. Go to the YMCA for water classes.
5. Build stamina for more walking.

1. Water every day - at least 100 oz.
2. Walk through Wal Mart instead of ride.
3. Post every day.
4. Get the exercise bike out of basement and use it!

I finally made this today. I didn't have any monteray jack cheese so I used cream cheese. Oh my, this was delicious. Next time I am going to use more salsa and kind of bake it in the sauce too. I'm going to use hot salsa next time too. It think the extra zest will be good.

I don't know exactly, it will depend on how thick your chicken breasts are. I think mine took about 45 minutes at 350, I just look at them occassionally and wait for them to look done!

I made these last night and they rocked! My 7 and 3 year old even ate them and they hate salsa but loved that it was stuffed in the chicken breast so it's a new favorite around here. I took the rest and ate them for breakfast the next day

LOL Lisa, it is easy! I'm glad this got bumped up though, I was trying to decided what to do with my chicken breasts I took out for dinner tonite, I think I'll make these again! Plus I have a fresh batch of extra hot salsa that I just canned on Saturday!

I made this last night but instead of salsa and monteray I used Canadian Bacon and Baby Swiss! I also mixed in some almond flour with the parmesean and some spices. Yum, it was delicious!
