I like playing around in the kitchen, and I just improvised a really yummy dish!
I cut up two chicken thighs with the skin, and stir-fried them in about 2 Tbsb of sesame oil. After they were partially cooked, I added about 1 cup of Kim Chi, 1 Tbsb of soy sauce, and a packet of splenda.
That's it. And it was one of the yummiest things I've cooked in a long time! It had the hotness and texture of well-made fajitas, with a hot savory edge and a hint of sweetness.
Next time I make it I'm going to leave out the soy sauce and cut down to 1/2 packet of splenda, since it was a bit too salty and every carb counts. I'll also stir fry half a cup of sweet onion with the chicken for added sharpness and a little bit more carmelization.
