  • Buttery eggs

    This is so simple and obvious that it's hardly a recipe, but as it helped me to eat more in the morning when omelettes and bacon were losing their appeal, here it is:

    2 freshly hard boiled eggs, shelled and still hot
    LARGE knob or slice of butter
    salt and pepper to taste

    Put all ingredients in a mug. Chop up eggs and butter together by cutting them against the sides with a knife [very quick and easy!] until the egg pieces are roughly pea sized and the butter is melted.

    Eat with a teaspoon .

    A high fat and cholesterol, but deliciously light and creamy childhood favourite, now resurrected for the Atkins diet.

    Scarlett, I totally forgot about Buttery Eggs YUM! I'm going to have to have that tomorrow.

      Or you could exchange the butter with heavy cream and add some herbs.

          I also grew up eating boiled eggs this way. Love em!!!

                Never had eggs this way (or even heard of it). I know this is a dumb question, but...what do they taste like? Eggs? Butter? Cream? Interesting.
