  • Stuffed Chicken

    Here is a picture and recipe for the chicken I saw Barbde had made- it was soooo good! And an entire meal in itself!

    6 5oz chicken breasts, laid flat and flattened as much as possible
    2 cups cooked frozen chopped broccoli
    1/2 cup shredded chaddar cheese
    1 tsp finely diced red bell pepper
    3-6 slices of bacon, sliced longways or left whole

    Mix broccoli, cheese, and bell pepper. Spoon onto chicken. Roll up as best as possible and secure with bacon. Place on sprayed pan and cook for 30 minutes covered at 375 degrees, then uncovered for 30.

    This was sooooo easy and quick, and it kept well in the fridge in the days following.

      Completely off topic......... My grandmother had those same Corelle dishes. Thank you for the trip down memory lane this morning!
