  • Pho' at home!!!

    this is wonderful when you feel a cold coming on!!!
    I love to add Kimchee to this and cross cultures but where we live there are several Korean run Pho' joints and now I am hooked on Kimchee in Pho!
    4 pounds bone-in beef shank or any meaty soup bones
    1 onion
    5 slices fresh ginger root
    1 pod star anise, whole (or you can use a tsp of 5spice)
    1 teaspoon salt
    2 1/2 tablespoons fish sauce
    1 pound raw eye of round partially freeze or partially thawed! so it can be sliced paper thin
    3 green onions, chopped
    2-3 cups fresh bean sprouts
    pile of fresh cilantro, or basal or mint
    1 thinly sliced jalepeno
    2 limes quartered
    hot sauce and hoison (check bottles for sugars I do not know if there is a sugar free hoison)
    extra fish sauce for those who want to add some

    In a large pot over medium heat, bring beef shank and 3 quarts water to a boil. Skim off foam. Reduce heat, cover and simmer 3 hours. during the last hour add the sliced onion, ginger, anise ,salt and pepper. I like to make the soup the day before chill and skim fat broth before doing the following

    Bring broth to a boil Divide sprouts into 4 serving bowls. Place thin slices of the raw beef on top of sprouts, sprinkle green onions, and fresh cracked pepper.. . Strain beef broth and divide evenly between serving bowls, pouring over assembled ingredients. Serve at once with the lime, jalepenos, herbs and condiments....

    I love Pho!!!!!!!!!!!!!!!!!!!!!! I have not had it in over a year. I am gonna have to go get some soon!

        Good to see you too! I have been pretty busy lately - lot going on with the storms, property damage, my new business etc.

        I will probably be around more in the next few weeks.

          I think Steels brand has a sugar free hoisin sauce. here is the website I cannot wait to order some!

              I was going to ask if your 'fish sauce" was hoisin sause which is oyster isnt it and does have sugar. What about that bottled fish juice. You may want to add some low carb hoisin to my care package. You also may want to leave that box open....I have a list
              I also love pho and this is going to be a recipe for when the weather gets chilly.

                Fish sauce should not have sugar it is just anchovies, salt and water
                oyster sauce is oyster sauce but it is kind of like a condiment and I have seen it only with sugar.
                hoison is more of a BBQy sauce used as a condiment too....
                you better send me a list and I will get the box off to you before Xmas!!!!
