if you really do not like okra....well make something else because this is like a gumbo and I can not think of anything else that would do!!!!
Juice 2 nice lemons
2 quarts of chicken broth (you can use canned just check the label)
4 peeled seeded and diced tomatoes (or you can use four canned plum tomatoes but it will not taste as fresh
2 c Sliced fresh Okra (or frozen)
2 ts Salt
1 Tbl hot chile or chayenne pepper (if you do not want the heat then try some sweet paprika
1 large chicken cut up and add an extra pack of legs if you like
1 x Lge Onion, peeled & chopped
1 6 oz can of tomato paste
1 ts Ground Tumeric
cracked pepper to taste
wash chicken soak for about 15 min in water with 1/3 cup kosher salt..rince and drain well then Rub lemon juice over chicken pieces. Put in a large kettle with chicken broth bring to a boil, lower heat and cook simmer, covered for about 12 minutes. Add remaining ingredients and continue to cook slowly about 30 minutes, until chicken is tender. Remove chicken pieces and debone. Cut meat into small pieces and return to kettle skim any fat you find undesirable...serve with fresh parsley and lemon wedges
