  • Tikka Chicken or lamb with mint chutney

    Tikka chicken ...I put this into fitday and it came to 2 carbs per serving with the veggies.... these are great of course on the BBQ! but I do them on a grill pan with the vent going!!!!

    3/4 cup whole milk yogurt (if on induction you can opt out of this but very little will be consumed as this is the marinade)
    2 tbsp minced fresh gingerroot
    1 large handfull cilantro (save some for garnish)
    2 tsp hot chili powder
    2 tbl curry powder
    2 tsp sweet paprika
    1 tsp cumin powder
    3 tbsp olive oil
    1/2 tsp salt
    1 1/2 lb boneless skinless chicken breasts or lamb cut 1" cubes
    one red bell pepper cut in squares
    one sweet onion cut in squares
    bamboo skewers (soak in water for at least an hour)
    Lime wedges, for garnish

    Day before you want to eat this mix well in a bowl
    yogurt, ginger, half the cilantro, all the dry spices add the meat cubes and toss with marinade then put in zipper bag and marinate over night ...mush around when you think about it!...

    About 1 hour before cooking, remove chicken from refrigerator and bring to room temperature. turn on your broiler or heat a grill pan.... Thread meat and veggies on skewers, place on a baking
    sheet and drizzle with oil. Sprinkle with salt. broil or grill until done....
    Sprinkle with chopped cilantro and garnish with lemon serve with mint chutney below

    Mint Chutney
    in a food processor or blender put
    1 bunch of fresh clean and dry mint (I spin it in the lettuce spinner)
    2 green chiles (jalepenos are great)
    1 tbl tamerind paste or 2 tbl lemon or lime juice
    pinch of salt
    just enough water to help it grind to thin paste...

    That recipe looks very similiar to one that I found on Atkins.com a while ago. If it's the same one, I can vouch that it's really yummy. I've made it quite a few times... but it's been a while. It's time to try it again soon.
