  • Stuffed Cabbage Casserole

    Stuffed Cabbage Casserole

    Brown lean ground beef in a skillet. (I used 2.5 lbs.)
    Drain of fat, and season with salt, pepper, onion powder, and garlic powder.
    Cut up a head of cabbage into "noodle-like" pieces.
    Mix ground beef, cabbage, 1 can of diced tomatoes and 1 can of tomato sauce (no sugar added). I found Stokeley's at Dollar General.
    Put in crock pot, and cook on high for about 4 hours.

    Delish!

    Note: This casserole makes a lot. Carb counts will depend upon how much you eat, but basically the total carb count for the entire casserole is under 65g. It would easily feed 8 people, so figure 8g per serving.
    June Goals
    1. Continue with water
    2. Use bike more (3x per week would be nice).
    3. Continue with videos.
    4. Go to the YMCA for water classes.
    5. Build stamina for more walking.


    Goals for May:
    1. Water every day - at least 100 oz.
    2. Walk through Wal Mart instead of ride.
    3. Post every day.
    4. Get the exercise bike out of basement and use it!
    5. Re-read DANDR! It's been too long.

    Oh my, I made this today. YUMMY..

    Ofcourse, I tweeked the recipe and made it my own. I made mine wiht half ground beef and half italian sausage, and added some red bell pepper onion and green pepper. With a tab of red crushed pepper for spice. MY gram always made her cabbage rolls spicy..YUMMMMY
