  • Faux Sushi

    One thing i missed (being Japanese and all!) is sushi, so i experimented and though it took some time, it was well worth it.

    Tuna rolls and Tuna Don

    Faux rice:
    1 small-med sized cauliflower.
    Grate, with food processor or a grater. After grating i got about 240grams.
    Vinegar - about 2-3tbs (make sure its just regular vinegar, and not the vinegar for sushi as they often add sugar to it)
    Granular Splenda- 1tsp

    Add some water to your pan and fry the "rice" untill soft, but not mushy.
    Place cooked "rice" in a big wide bowl or plate. With a hand fan or something similar, (i used one of my plastic lids to a ziplock sandwich container) fan the "rice" for about 5mins. Add the vinegar and splenda a little at a time, and continue to fan. Keep doing this untill the "rice" has cooled completely.

    Filling and Dried Seaweed:

    This is really up to you. I used tuna and avacodo and mayo.
    Use rectangular shaped nori (dried seaweed), and size depends on how big you want them.

    Place nori on dry surface, and add a layer of "rice". Place whatever fillers you like, and roll them up as tightly as possible. Cut rolls into desired thickness.
    (i made 3 long rolls; 1 tuna roll, 1 tuna and avacodo roll, and 1 tuna avacodo and mayo roll. They cut up to 5 pieces each)

    The faux rice does not hold as well as traditional japanese "sticky" rice, and it got a little crumbly, but if youre gentle when cutting, it works out well.






    I had lots of "rice" and tuna and avacodo left over so i made a tuna rice bowl. I used to eat this all the time, and this too turned out very much like the real deal.
    Put rice in a bowl, and put whatever toppings you desire on top. Sprinkle cut up nori on top, and drizzle (watch your amount!) some soy sauce.




    I like to mix it all up, and this is what it looks like when its all mixed.

    That looks wonderful Yuri! Thanks for sharing (I see you got the pics to post o.k.) I'm going to have to try this i really do miss sushi, I'm still a little skeptical about the flavor of the cauliflower though--I really disliked it as fauxtatos...can you still taste the cauliflower w/ the vinegar and splenda?

      MOG, i too couldnt stand the taste of faux mashed potatoes.... i took one bite and was so turned off!!

      however........ all my faux rice recpies so far have been great! the fried rice was awesome too. tasted so much like the real stuff.

      try it out, see how u like it. good luck!!

          I ask them to use chopped cabbage or shredded daikon in place of rice in my sushi, when I eat at a sushi bar. That tastes fine also.

            Wow Yuri, just saw your "before" picture for the first time. Good job! I hope to have my pictures up soon. Pound and a half to go...... which should take......... FOREVER! So close! Anyway, good recipe, I'll have to try that. I've just been having the regular sushi but I try to have lots of edame (did I spell that right?) beforehand so I don't have too much rice. Or I've been going with just sashimi, but that gets expensive.... and it's not really the same thing. What kills the cauliflower taste? Is it the vinegar?

              Thank-you so much for posting this!!! I have been so jealous watching my boyfriend go at his sushi while I pick at a crappy salad..... thanks again!

                    Wow, I really need to hit up the local Hibacho for some Sashimi. If only my roomate were into it lol...

                      I just had sushi for the first time this week (just 2 pieces with rice...I couldn't resist! And it was so so good). I'm really excited to try this but I've never worked with raw tuna before. Does anyone have any advice for a sushi novice?

                        this is awesome ^_^ I love sushi...I'll try your way since we can't have real rice.. I'll play around with the fillings.. maybe a moc-cali rolls hehe

                          Yuri! omg your the best. I eat this a few times a week now. I love sushi and used to make my own with rice. But I stopped because of my new atkins lifestyle but now I make it many times a week for my husband and I and our kids. Your the best! thank you so much for sharing.

                            OMG I just got around to trying this and it was so good! I bought one of those cheap shrimp rings, cut it up in my mini chopper and used it and avacado for the center filling. I just nuked the grated cauliflower for a couple of minutes, let it cool and added gar gum for stickiness. Wasn't that much of a difference in taste from the rice variety. YUMMY!
