  • Better Than Pizza Pie

    Someone recently posted a muffin recipe here (somewhere here?) and I started with that recipe and tweaked it and ended up with this wonderful "BETTER THAN PIZZA PIE" recipe. I can live without pizza now that I have this! Crust - who needs it! You could make this recipe with any pizza ingredients you want... mushrooms, pepperoni, green peppers, etc. etc.

    CAUTION: I'm on extended induction and have not had ANY cravings at all but I over ate this because it tasted soooooo good! It did not make me crave. Note my weight loss in my signature for the last week.... ZERO! Also, I am somewhat allergic to eggs, they give me a tummy ache. However, this recipe does not give me a tummy ache.

    Would someone please figure out the carb count on this please!

    Better Than Pizza Pie

    (Make with any pizza ingredients you like or follow the recipe exactly as below.)



    2 T (Tablespoons)Butter melted

    3 Eggs (separated)

    6 oz (3/4ths cup) Heavy Whipping Cream

    4 oz Cream Cheese (softened)

    ½ Cup grated Sharp Cheddar Cheese (Cracker Barrel is good)

    ½ Cup grated Ricotta (The hard kind from the deli)

    2 Tablespoons Parsley Flakes

    1 Cup home made bacon bits (make them bigger than the store bought kind)

    ½ Cup chopped Ham bits (optional)

    ½ Cup chopped Onions (optional – if you don’t use then use a dash of onion powder)

    Dash or 2 of salt



    Whip the egg whites until they form soft white peaks and set aside.

    Mix the melted butter, salt, whipping cream, eggs and cheeses.

    Add the onion. Mix in most of the bacon, ham, and parsley flakes saving some for the top. Add the egg whites. Pour into a greased (or Pam sprayed) quiche pan – making sure to evenly distribute the parts of the mixture with the meat and onions. Add the remaining meat to the top of the mixture and sprinkle with the remaining parsley flakes.

    Place in a 350 oven for 25 to 30 minutes (I used a large toaster oven). When nice and brown on top and starting to separate from the sides, turn off oven and open the door but leave the pie inside for a few minutes. This is good warm but SOOOOO EXCELLENT cold!

    This is a picture of the first one I made where I whipped the egg whites too much. It just made it flatter.


    This is BETTER COLD - Here is a picture of my steak salad with slices on the side. Notice I couldn't even wait to take a picture before I had a bite. Yummmmmmm!

      Look good, like a quiche. but I'm confused, you said

      ½ Cup grated Ricotta (The hard kind from the deli)


      Since Ricotta is usually the consistency of small curd cottage cheese I think maybe you might have meant to say Parmesean?

        Nope - it's called Ricotta Salata - I bought it by accident - it does not melt easily either so it has a nice texture.

              Very interesting, a cheese I've never heard of! Now I have to look for it! I cannot allow a cheese to go unsampled!

                  Thanks for sharing this recipe...and that cheese! I'm with MOG....I've gotta find that cheese. mmmmmm.....cheese!

                    Since Ricotta is usually the consistency of small curd cottage cheese I think maybe you might have meant to say Parmesean?
                    I use grated Ricotta in place of Parmesean in a lot of recipes because hubby isn't a big fan of Parmesean. It's really good in Barbde's recipe for fried chicken.

                          Just charted out this recipe on fitday because I was curious of the carb content, and we are looking at 19g carbs for the whole pie, so divide this by the number of slices you eat

                            my MIL makes something like this at easter - it's proper name is "Pizza Piena", sometimes also called "Pizza Rustica" - although in the north jersey-sopranos-accent of DH's italian-american family, it is called "pizza gain-a". here is her recipe:

                            Crust
                            2 cups all purpose flour
                            3/4 teaspoon salt
                            2 sticks unsalted butter, cut in cubes
                            2 eggs

                            Filling
                            6 eggs
                            salt and pepper to taste
                            8 ounces ricotta cheese
                            4 ounces shredded mozzarella cheese
                            diced salami
                            diced prosciutto

                            ditch the crust and you've got that atkins version of it. make sure to use the good proscuitt - has to have a stamp from parma on it.

                              This pie was delicious. I was looking for something different and easy to make. It took a bit longer than I was originally looking for, but it really is quite good.

                              I used the parmesean/reggiano mix from trader joe's instead of the hard ricotta, added dried basil and garlic instead of parsley and capicola instead of ham.

                              It totally hit the spot. I love it.

                              I am once again incredibly grateful to have found this site. YEA!
