My first time working with ground chicken and it seems very versatile. I like the fact that you can season the meat throughout.
I mixed the ground chicken with egg and lots of herbs. Then I spread it on waxed paper and covered it with ham slices. Next, I mixed cotijo (can just use parmesan) and egg together then folded in some baby spinach leaves and spread that over the ham:

Then I rolled it all up, covered the outside with parmesan, and baked it at 375F until it reached an internal temp of 170F (45 minutes in my oven). I sliced it and it was very yummy. I've done similar stuff, but it's nice when it all holds together so firmly like this one did.
