  • Chicken Alfredo Spinach Lasagna

    Okay So I made Linda's spinach lasagna and decided to try something of my own. Here it is. I did use alot of her cooking text since I'm no cook book author Thank you Linda! http://users3.ev1.net/~fontlady/spinach_lasagna.html

    Chicken Alfredo Spinach Lasagna

    2-3 chicken breasts (I used 2 large)
    1 16 oz Jar Alfredo Sauce (I bought one with added mushrooms)
    1 8-12 oz Can of Artichokes
    10 ounces frozen chopped spinach
    8 ounces cream cheese
    1 egg
    1/8 teaspoon pepper
    4 ounces cheese, shredded (I used 1/2 cheddar/ 1/2 mozzarella)
    2 tablespoons parmesan cheese (I used the kind in a can)

    Cook and cube chicken (I cut and cooked mine for faster results) season with a bit of salt and pepper during cooking. Drain the water from the artichokes and chop into strips, keep it a bit chunky. Add the artichokes and Alfredo sauce to the cooked chicken, mix well and set aside. Meanwhile thaw and drain the spinach. I ran mine under hot top water in a strainer and squeezed dry. Soften the cream cheese in a medium-size microwaveable bowl for about 40-60 seconds. Stir until creamy; beat in egg and pepper with a spoon until well mixed. Blend in the spinach. Spread no more then half the chicken mixture evenly in the bottom of a greased 8 X 11.5 (2 quart) glass baking dish. I like to put just enough to cover the bottom making sure I have enough for the top layer. Spread spinach mixture over the chicken; top with the cheese, then the rest of the chicken. Sprinkle with the parmesan cheese. Bake at 350ยบ about 30 minutes until hot and bubbly. Let stand a few minutes before eating. Can be frozen

    Cooks notes
    * Feel free to make your own sauce for a lower carb count, Linda has a great recipe here, however I am unaware of the ammount it makes, I used 2 cups since I put it into a larger pan, I wanted it real creamy. She uses 1/2 a Cup in the original recipe.

    * I used what cheese I had on hand
    * Linda uses a 8 x 8" glass baking pan, feel free I just used what I had.
    * Linda gives microwaving directions for the original recipe if you don't feel like baking it. "cover with plastic wrap and vent one corner then microwave on HIGH for 3 minutes; then reduce to MEDIUM and cook for another 7-10 minutes until hot and bubbly. Let stand 3 minutes before serving."

      OMg Im with Sadie, that sounds DELICIOUS! talk about comfort food for when its cold and dreary outside. Thanks so much for sharing.
