Hi! :wave Here's another pitch and throw recipe for you to try:
Tonight I purchased 1lb of slab (thick) bacon -- cut width to 1/4"
Fried until crisp in olive (or canola) oil -- adding in a couple of sprinkles of garlic powder.
Add: 3 garlic cloves, peeled and sliced thin -- 3 yellow shallots (tiny onions) peeled and sliced thin.
Add: 1 pkg of "baby" chinese eggplant (approx. 8 of them) trimmed and cut width to 1/4".
1 cup of water and a couple dashes of paprika. Let simmer.
Add a tablespoon or two of oyster sauce (msg free)
Thinly sliced jalapeno as desired.
A packet or sprinkle of Splenda.
Stir constantly until egg plant is become soft and full of flavor.
Add fresh leaf basil and green onions for a minute or two before serving over a fresh bed of different red and green lettuces.
