    Kat’s Hot Pesto Turkey salad



    I CRAVE pesto…it is my favorite.

    This is one of those great combination hot and cold salads….very yummy.

    I am not certain that this is induction friendly because traditional pesto has some walnuts or pine nuts in it. ( no nuts allowed on strict induction) If you can find pesto without nuts or can make your own, just use it that way. Then it will definitely be induction friendly! (Very high fat and protein content!)

    BTW: Trader Joes markets (if you have one near you) has a great fresh pesto with walnuts in it. ¼ cup is only 2 grams of carbs…and a little pesto goes a loooong way! I think it is called Genovese Pesto. You can find it in the refrigerated foods section.

    Ingredients:

    4-6 Ounces shredded turkey breast

    Pesto sauce to taste (enough to moderately “cover” the turkey in the pan)

    1 tbsp mayo

    1 cup alfalfa sprouts

    ½ cup cucumbers

    Preparation:

    Place pesto in frying pan over medium heat until warm

    Add shredded turkey and stir to coat with pesto

    Add mayo

    Cook until turkey mixture is nice and hot

    In a bowl, arrange your alfalfa sprouts and cucumbers

    Pour the hot mixture of turkey and pesto over the center of the salad.

    looks good they could even pour it overe that new Bread Valid Rogue has been posting about from ther desserts forum just shipped egg whites baked as a piece of bread.
