Some of you are going to say eeewwww I just know it, but this is so excellent and satisfying. I tend to make soups from all kinds of meat pieces I don't know what else to do with.
3# of turkey tails, or wings (not the drummette), or both ...tails are best
enough water just to cover the meat. Bring to a simmer, never a boil and turn to lowest heat and let cook for about 4 to 6 hours. For the first hour you may need to skim the top. You will have a rich broth.
Dice kolrabi and Jerusalem artichoke if you can have it on Atkins, if not use French artichoke bottoms only, no fuzz....add to pot and cook til vegies are soft
When just done, ribbon cut the kohlrabi green tops and also some kale and add to pot and cook 5-10 more minutes, or until done to your liking...Never let the pot boil. Salt and pepper to taste if needed
