  • Unwrapped chicken enchiladas

    I cook for six. Adjust accordingly. ensive

    6 pieces of chicken (your preference of course)
    1 can of chicken broth and then just cover with water
    onion powder (or onion)
    celery powder (or finely minced celery)

    Cover and cook on stop top at medium/medium high until chicken is cooked through. Uncover and reduce liquid by half. Remove chicken pieces and place on holding plate.

    Add
    1 cup cream (6.4 carbs)
    1/2 cup sour cream (4 carbs)
    Blend well and thicken with thicken thin/not starch

    Add
    1 cup shredded cheddar and stir until smooth.

    Return chicken to pan and serve.

    Hope you enjoy this. My family went craze over the sauce.
