Yes, it is heavier carb, but again I usually eat most of my carbs at breakfast time.
Southwestern Style Turkey Scrambled Eggs
2 eggs beaten
6 ounces of turkey breast
1 ounce of vegatable oil
1/2 cup shredded mozz/cheddar cheese
1/2 cup green peppers
2 teaspoon sour cream
1 ounce of sliced jalapenos
a dash of cajun seasoning (or .125 teaspoon of onion powder, garlic powder, salt, pepper, and paprika is the equivalent)
Add the tablespoon of oil to a frying pan, heat on medium for a minute. Add the ground turkey and the cejun seasoning to the pan and brown. When turkey is brown, add the green peppers and stir for 1 minute.
Next, add the beaten eggs to the frying pan and let sit for 30 seconds. Add the cheese. Stir frequently until eggs are thoroughly cooked.
Place mixture onto a plate, and top with the hotsauce, sour cream, and jalapenos! Enjoy! yum
