  • Southwestern Style Turkey Scrambled Eggs

Yes, it is heavier carb, but again I usually eat most of my carbs at breakfast time.

    Southwestern Style Turkey Scrambled Eggs

    2 eggs beaten
    6 ounces of turkey breast
    1 ounce of vegatable oil
    1/2 cup shredded mozz/cheddar cheese
    1/2 cup green peppers
    2 teaspoon sour cream
    1 ounce of sliced jalapenos
a dash of cajun seasoning (or .125 teaspoon of onion powder, garlic powder, salt, pepper, and paprika is the equivalent)

Add the tablespoon of oil to a frying pan, heat on medium for a minute. Add the ground turkey and the cejun seasoning to the pan and brown. When turkey is brown, add the green peppers and stir for 1 minute.

Next, add the beaten eggs to the frying pan and let sit for 30 seconds. Add the cheese. Stir frequently until eggs are thoroughly cooked.

Place mixture onto a plate, and top with the hotsauce, sour cream, and jalapenos! Enjoy! yum

Total Carbs for entire recipe: 13 personal note---couldn't eat it all.... can more than likely split the recipe or the food in half

It seems like if we could deduct fiber, we should beable to deduct the heat from the jalapenoes. They certainly whip up a sweat.
