1 pound uncooked extra jumbo shrimp peeled and de-veined
1 tablespoon finely chopped fresh cilantro
1 teaspoon Spicy Garam Masala
1 teaspoon salt
1 medium tomato chopped
1/2 cup sliced daikon or radishes
1/2 cup finely chopped mint leaves
1/4 cup water
3 medium cloves garlic
1 or 2 fresh thai or serrano chilies
Juice of 1 medium lime
1 tablespoon vegetable oil
Mix shrimp, cilantro, Spicy garam masala and 1/2 teaspoon of the salt in a bowl. Cover and refrigerate for at least 30 min but no longer than 24 hours.
Place remaining salt and all other ingredients(except oil) in blender. Blend on medium speed until smooth
Heat oil in skillet over medium high heat. Arrange shrimp in a single layer in skillet. Cook each side 30-60 seconds until partially pink.
Stir mint sauce into shrimp, cover and cook for 2-4 minutes, turning shrimp once or twice until shrimp are pink and firm.
