    I was trying to think of something interesting to do with chicken for dinner last night and came up with this. I was in heaven eating this and seriosly could not beleive I was on a diet.

    try this you will love it!!!

    smothered, bacon wrapped chicken

    1 medium boneless skinless chicken breast
    1 oz of cheese > I used munster
    2 slices of thin sliced bacon

    Hollandaise sauce mixed with a pinch of dried tyme > I found a receipe on this site for hollandaise sauce and used it, but I think all hollandaise sauce has low carbs

    3 or 4 toothpicks

    .............................................

    cut chicken lenght wise almost all the way through so you get one thin peice... (this is hard for me to explain, I supose you could also use plastic wrap and a meat mallet to pound the chicken flat, but I like cutting it)

    dice cheese and put in the middlle of chicken breast and roll up. take bacon and wrap around the chicken making sure cheese dose not fall out. put tooth picks in places to sucure, take a little practice.

    get frying pan hot and fry on all sides until bacon is brown

    put on baking pan and bake at 350* for about 15 minutes

    remove all toothpicks

    smother in 2 tbls - 1/4 cup hollandaise sauce and enjoy

    MMM!! that sounds delicious! I had something like this before, except I think my friend used cream cheese.

      wow! that does sound good! Another one like that is to stuff Chicken with cream cheese mixed with chives and then wrap it in bacon. Cook it at 350 for 30 minutes, top it with more of the cream cheese mixture and bake for another 15 minutes. Sooooo good!!

          that does sound good... I also do ricotta and spinnach... hope both of thouse are low carb.

            My variation is to put a slice of bacon on a large square of baking foil then a chicken breast then another slice of bacon and fold the foil round and seal it closed by turning the edges over and over.
            Then put in the oven for about half an hour then unwrap and add a slice of cheese and put under the grill or leave in the oven till the cheese has melted.
            It is a very 'forgiving' recipe as you can cook it for longer without spoiling it as long as you leave the foil parcels closed.
