I have a tendancy to just throw in what seems like it would taste good and not be very good about measurments. So feel free to adjust these ingredients to taste, as long as you have enough liquid to cook with. I made this last night and my wife and I both though it was excellent.
8-12 Chicken Breast tenders (we buy the Costco stuff, not sure how many OZ this is) cut into halves or thirds
1/2 or more cup cabbage
1/2 cup canned bamboo shoots (drained)
3 chopped green onions (I usually use scissors)
1/4 cup olive oil
1/4 rice wine vinegar
2 tablespoons soy sauce
1 teaspoon fish oil (more if you like the taste)
1 ish tsp finely chopped ginger
1 or 2 cloves or finey chopped garlic
pinch to 1 tsp granulated Splenda (I like it with a bit of sweetness but it's not particularly necassary)
Pepper to taste
Pour liquids into a saucepan or wok on medium heat. Add chicken, garlic, and ginger and cook for about a minute. Add in the cabbage and green onions. Stir it around occasionally so the vegies and meat are being coated with the sauce regularly. When the chicken is thorougly cooked you are done. It's pretty fast overall, around 8-12 minutes. Only trick is to not cook it too hot, or you might have problems with the garlic.
If you have extra carbs to spare I'd recommend more cabbage, that stuff cooks down so far it doesn't seem like much when you are done.
