    Agneau au Citron:

    This is Induction friendly, makes 6 portions, and contains 4.42 net carb per portion. (carb calculation The Living Cookbook)

    4 tablespoons olive oil

    2.2 lb lamb

    1 clove garlic

    2 medium onions

    2 tablespoons paprika

    2 tablespoons parsley

    3 tablespoons lemon juice

    Servings: 6

    Yield: 4.42 Net Carbs

    Finely chop 2 medium onions, and the garlic clove. Put to one side.

    Cut shoulder of lamb into 1 " cubes. Heat frying pan (or wok) , add olive oil and the cubed lamb. Brown the lamb lightly all over until golden brown. Remove from heat, and put the lamb on a plate to one side, leave oil + fat in pan.

    Add the onions and garlic to the frying pan and cook until translucent but not golden. Take off the heat. You are finished with the frying pan.

    To a casserole (lidded oven dish) add paprika, the lamb, onion/garlic mix, parsley and lemon juice, salt and pepper to taste. Put lid on casserole, and put in a low oven, 160C / 325F / Gas mark 3 for an hour.

    Enjoy with a simple green salad as the French do, and if you want some vinagrette, remember to add the carbs!

    Okay, this is fantastic. I love lamb and have been looking for a simple but elegant preparation for ages!

      Should the parsley be dried or fresh? Or doesn't it really matter?
