Easy, Awesome, No Cleanup and Probably Posted Before...
1-2 Boneless, Skinless Chicken Breasts, Fully cooked, sliced into strips
1 cup shredded iceberg lettuce (the dark greens have more vitamins but this is a dish designed to imitate a favorite of mine pre-atkins use the dark greens if desired but it's just not the same)
1 tsp Old El Paso or Taco Bell Taco Seasoning
1-2 ounces Mexican Style Shredded Cheese (Has Cheddar, Asiago and Jack cheeses)
Lay chicken in a single layer on aluminum foil because you hate cleaning. Sprinkle seasoning mix, then cheese on top. Broil for a couple minutes. Watch it like a hawk or it'll burn like a red-head in august. When it is bubble and slightly toasty brown, remove from oven, put the whole thing, aluminum and all on a plate and put the shredded lettuce on top. Serve with a little salsa. ChiChis has only 2g carbs per serving. Not sure if it is really atkins friendly though. And/or you can use some ranch dressing. I like T-Marzettis Ranch dressing found where the bagged lettuce is at the Wal-Mart.
