  • Stuffed Chicken

I made this up, althought it is pretty standard. My wife was getting tired of making her own meals, so I tried to come up with something both of us could eat.

Serving Size: 1 breast, Makes 4

    4 Chicken Breasts
4 cloves of garlic (minced or pressed)
    8 crimini mushrooms (minced)
    2.5 oz dunguness crab meat
    4 tbs butter (melted)
2 tbs Real Lemon Juice (says 0 carbs on the label)
    .5 oz grated romano cheese
    .5 oz grated parmesan cheese
    .5 oz grated asiago cheese

Cut a small slit into the chicken breast lenghtwise. Slip the knife in through the slit and cut up to the edges of the chicken breast.

In a bowl, combine the garlic, mushrooms, crab, butter, lemon and all 3 cheeses. Add any herbs you prefer (I used alot of basil with a little bit of dill weed).

Using your fingers, stuff each chicken breast with an equal amount of the stuffing.

Place in a roasting pan or casserole dish, a small enough one so the oil and juices can coat the chicken during cooking. Coat heavily with olive oil. Add herbs. (I used La Martiniques 0 carb French Vinaigrette instead of olive oil).

Place in the oven at 350 degrees for 25 minutes (our oven runs hot so you may need to adjust this for yours).

Each serving has 3 grams net carbs according to fitday!
