Someone gave me this recipe, and it was so good I kept stopping to count the carbs in my head because it tasted like I was cheating, lol. Its for taco's, and it is the best, IMO. 
Desired amount of ground hamburger. I usually make a soup bowl full amount.
4 tbsp of Pace salsa, medium or hot. Mild is too weak, it will lose spiciness as it cooks. Must be Pace, which is the only salsa that tastes right for this and doesn't have sugar added; carb free.
2 ounces cheese
2 tbsp sour cream
diced tomato
Large lettuce leafs
Put cooked meat in pan, add salsa, cook to hot. Remove, place in a large, thicker lettuce leaf, cover with cheese, sour cream, and tomato.
The lettuce leaf crunches like a taco, very good.
Salsa = 0 carbs
Sour cream = 4 carbs
Tomato = depends on amount, small tomato has 3 carbs
Cheese = depends on amount
Lettuce = almost none
Enjoy
