  • Curry Chicken Salad

    I LOVE Curry Chicken Salad. I use to get it from a health food store here, but it had raisins and walnuts in it so I couldn't eat it I made it myself last night, and thought I would share it.
    I cooked 3 chicken breasts (I just broiled them)
    I let them cool, then I cubed them.
    I added Dukes mayo (it has no sugar in it...add to your own taste)
    Curry Powder to taste
    a little celery for crunch (you can add onion too if you like)
    Mix it all up and WHALAH!!!



    I ate half of it last night, and the other half today for lunch. I put it on romain lettuce leaves and I really enjoyed it

    Oh, and if you can eat nuts, walnuts taste great in it!!! Little pieces of apple do too if anyone is eating apples

        I too love curry salad, but had never thought to add the apples and walnuts..thatnks for that suggestion, it sounds wonderful!

          We're on week 3 of induction, so I'm going to try this with the walnuts. Looks yummy!!

              You could add jicama in place of the apple!

              Jicama is a salad veggie on the induction foods list. It's sweet and crunchy, almost like a cross between an apple and a pear. I think it would be a GREAT addition to this recipe!

                  I like to eat them raw and plain. They're very juicy, sweet, and crunchy. Many people use them as an apple substitution.

                      That's a great idea Julie!!! I just bought some jicama yesterday. I'm gonna try that I love it too. I always eat it raw all by itself
