I LOVE Curry Chicken Salad. I use to get it from a health food store here, but it had raisins and walnuts in it so I couldn't eat it
I made it myself last night, and thought I would share it.
I cooked 3 chicken breasts (I just broiled them)
I let them cool, then I cubed them.
I added Dukes mayo (it has no sugar in it...add to your own taste)
Curry Powder to taste
a little celery for crunch (you can add onion too if you like)
Mix it all up and WHALAH!!!

I ate half of it last night, and the other half today for lunch. I put it on romain lettuce leaves and I really enjoyed it
