  • Asian Ginger Beef Stir Fry

    This fills my craving for asian food. I am a chinese food fanatic. It is sweet and flavorful:

    3/4 lb sliced beef eye of round (should equal 10 oz once cooked)
    (thin sliced steaks, sometimes labeled breakfast steaks)

    1 cup colored peppers (I like red, orange, and yellow)

    1/2 cup fresh, raw mushrooms, sliced

    1 cup fresh, raw eggplant, cubed or sliced

    2 TBS Sesame Oil

    Stir Fry Sauce:

    1/4 cup soy sauce

    1 tsp sherry cooking wine

    1 TBS Walden Farms Ketchup (no cal, no carbs!)

    1/2 clove fresh garlic, minced, or 1/4 tsp. minced garlic in jar

    3 tsp grated fresh ginger

    Juice of one orange, squeezed by hand

    2 packets Splenda

    (crushed red pepper if you like a little spice)

    1.) Combine ingredients for marinade and set to side

    2.) Brown steak in non-stick skillet. Drain off liquid. Put meat into marinade to soak.

    3.) Heat non-stick pan over medium heat, then add 2 TBS of sesame oil. When oil is heated, add all sliced vegetables.

    4.) When vegetables are soft, add meat/marinade mixture. Heat completely through until sauce is bubbling, then serve!

    Serves 2.

    Per serving: 427 calories, 47.5g protein, 20g fat, 9g net carbs
