    Hi all,

    This is a big time favorite over here. It is very easy to make as well.

    I just take a couple of tablespoons of butter and a couple of olive oil and heat it in a pan over medium high heat. Add the scallops and saute on each side for about 4 minutes. If they are small the will cook faster, if larger cook them a little longer.

    When they are done, sprinkle with a little garlic powder. I do not salt my scallops. I find that the salted butter salts them plenty, plus scallops have sea salt in them as well.

    Serve with a nice leafy salad.

    Christine - a question for you. I love scallops when I dine out but never buy them because I don't know how to tell when they are "done". Is there some sort of "clue" I missed out on to know when they are thoroughly cooked?

      You don't need to worry about them being thoroughly cooked. Just sear very quickly till they brown a bit. Scallops are not dangerous undercooked as long as they are fresh, and undercooked is far better than dry, overcooked scallops.
