Delish! And very easy to make!!
Before atkins, I used Italian breadcrumbs for the breading. Just substitue pork rinds.. and its Atkins friendly and YUMMY!
What you will need:
Boneless chicken thighs or breasts
Your fave low carb Ranch dressing
Pork Rinds (I like the spicy to give it a bite!)
Baking dish
Put pork rinds in a plastic bag and use rolling pin or meat tenderizer to crush into fine pieces.
Coat chicken pieces in ranch dressing, then roll in pork rinds.
Place in baking dish and bake on 375 for about 45 minutes.
The chicken stays moist on the inside, and the outside gets crispy. Like I said I use the spicy pork rinds, so it has a bit of a kick to it as well.
Very yummy! The family actually enjoyed it better this way than with the breadcrumbs!!!
Serve with fave side dish..
(You can fry this recipe as well, but I like the taste of the baked version better.. the chicken stay more moist and the breading stays on better.. But both ways are good and tasty!)
