  • Spicy Ranch Chicken

    Delish! And very easy to make!!

    Before atkins, I used Italian breadcrumbs for the breading. Just substitue pork rinds.. and its Atkins friendly and YUMMY!

    What you will need:

    Boneless chicken thighs or breasts
    Your fave low carb Ranch dressing
    Pork Rinds (I like the spicy to give it a bite!)
    Baking dish


    Put pork rinds in a plastic bag and use rolling pin or meat tenderizer to crush into fine pieces.

    Coat chicken pieces in ranch dressing, then roll in pork rinds.

    Place in baking dish and bake on 375 for about 45 minutes.

    The chicken stays moist on the inside, and the outside gets crispy. Like I said I use the spicy pork rinds, so it has a bit of a kick to it as well.

    Very yummy! The family actually enjoyed it better this way than with the breadcrumbs!!!

    Serve with fave side dish..

    (You can fry this recipe as well, but I like the taste of the baked version better.. the chicken stay more moist and the breading stays on better.. But both ways are good and tasty!)

    The recipe looks great. Next time I am in Germany(can only find ranch dressing in the walmart there) I am going to pick up several bottles of ranch to try this recipe out. Thanks!

      I made this for dinner last night and it was awesome! I used boneless skinless chicken strips and made "tenders" it was yummy. I also mixed a little Franks red hot sauce in with the ranch. MMMMMM. Thanks Swimming!

        This is the recipe I use for ranch from Linda's site. I am used to buying BOTTLES upon BOTTLES of ranch because its my familys favorite but since I tried this recipe I wouldn't buy another bottle atkins or not. It's so good and you can control what goes in it. Like I don't have tabasco, dill or celery salt at the moment but the ranch is still awesome.

        RANCH-STYLE SALAD DRESSING
        1/4 cup mayonnaise
        1 tablespoon sour cream
        2 tablespoons heavy cream
        1 teaspoon white vinegar
        2 drops Tabasco
        1/8 teaspoon granular Splenda
        1/4 teaspoon garlic powder
        1/8 teaspoon onion powder
        1/8 teaspoon celery salt
        1/4 teaspoon pepper
        1/8 teaspoon dill
        1/2 teaspoon chives
        1 teaspoon fresh parsley, minced


        Mix all ingredients and chill well before serving.

        Makes about 7 tablespoons

        Per Tablespoon: 76 Calories; 8g Fat; trace Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs
        Per 2 Tablespoons: 178 Calories; 19g Fat; 1g Protein; 2g Carbohydrate; trace Dietary Fiber; 1.5g Net Carbs



        This comes out quite thick so could probably thin it down with a little water which would also cut the carbs a bit.
