  • Pizza, Homemade and Low Carb

    I have seen this recipe a few times and have been dying to make it. I finally did last night for dinner. I really liked it. Just a couple of things though. I need to brown it a little more in the middle next time, and brown it in a little less oil. Other than that it's GREAT!!! Here's the recipe and pics...

    Pizza Crust
    3 tablespoons flax meal
    2 tablespoons parmesan cheese
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    1/4 teaspoon baking powder
    1 teaspoon granular Splenda, optional
    1 teaspoon Italian seasoning
    1 egg
    2 teaspoons water
    1-2 teaspoons oil

    Mix dry ingredients; add egg, water and oil. Spray a microwaveable dinner plate with cooking spray. Spread batter on plate in a circle. Microwave on HIGH 1 minute 40 seconds. Meanwhile heat a little oil in a medium skillet on about medium heat; slide crust off plate into a skillet. Brown on both sides. Place crust on baking sheet; add the toppings of your choice. Bake at 350ยบ about 15 minutes until hot and bubbly.

    Makes 1 serving

    Per Pizza Crust:
    300 Calories
    24g Fat
    15g Protein
    10g Carbohydrate
    6g Dietary Fiber
    4g Net Carbs

    Now that is just for the crust. You have to add tomato, or pizza sauce (I get a pasta sauce that only has 1 carb for 2 tblsp or 2 carbs for a quarter cup, and it's DELISH, but it's $7 a jar which is CRAZY). You have to add in your cheese (I used 2 oz total of mozzarella and a little fresh parmasian grated on top). Then I cut two slices of pepperoni and a little fresh spinach that I sauteed in a drop of olive oil for a minute. That came out to another 3 Net carbs. So the total Carbs for the pizza was 7 which really isn't bad for Pizza You can add your own favorite toppings. Next time I'm going to put Spinach, and a little fetta cheese

    Here I am again.... following you around the board copying your recipes!

    Didn't I see you post something once about not being much of a cook?? I would argue about that!! Everything looks great!

      Nicole this is a great recipe--I used to make this all the time! It's very tasty, VERY satisfying. I have a slight variation. I leave out the onion powder, and instead, I add basil, oregano, and red pepper flakes. YEEEEEEEEHAW!

      Oh, also I've skipped the tomato sauce, and instead put olive oil, fresh garlic, bell peppers, and chunks of mozzarella on it. YUM!

          Yep, that was me!!! You have a great memory dream
          I ALWAYS hated cooking. I mean I couldn't stand it, AND I ruined everything I ever cooked...lmao!!! Now I look forward to it, and I buy myself (or Michael buys me) "COOKING PRESENTS" for every 5 pounds I lose (I may have to move it up to every 10 pounds)...bahahahahaha!!! Like today, Michael is buying me mixing bowls I desperatly need. I've never had mixing bowls

            Nicole that is so cool!

            I've found that I really love cooking. In fact, I'd rather cook dinner than eat out. For one, I think my food tastes better, and two, I like to know EXACTLY what is in my meal!

                It's a great idea, Nicole. I've been buying more cooking things too. When I got divorced, I practically emptied my kitchen. (Don't ask me why... I'm not really sure...) I started adding things back so everything in my kitchen would be new. For a long time I hardly used any of it though because I didn't think it was worth cooking for one.

                But now I'm enjoying cooking for myself because I know how much healthier it is. I even pulled out the full size food processor and put it back on the counter. It makes grating cauliflower a cinch!

                Cooking at home is cheaper too. I don't understand the people that say they can't afford this diet. It doesn't have to be expensive. And even if you buy the occasional steak or expensive piece of seafood, it's still cheaper in the long run. It can be $6 or $7 or more for a super-duper sized fast food meal.

                Those bowls look nice - they won't slide around the countertop on you.

                  When I divorced my husband (best day of my life by the way *throws confetti*) I kept alot, and I bought a bunch of new stuff I never used until recently. Oooo and you just reminded me I need to get a food processor!!! Are they really expensive??? I need a nice mixer too. Maybe I should save to get those when I hit 250 and 200

                    LOL... I tossed so much stuff and got new that you just wouldn't believe it. It was fun!

                    My food processor wasn't really too bad. I hit a really great sale and if I'm remembering right, I paid about $80 for it. It's a full size Cuisinart and I just love it.

                    Ohhhh... and I splurged on a new hand mixer right before Thanksgiving too! It's a Kitchen Aid digital and it's soooo nice. It has attachments like a whisk and one that makes it an immersion blender.

                            Man, I *love* my el-cheapo immersion blender. Sooo, I can just imagine how much I'd love a nice one by kitchenaid or cuisinart!!!! The blades on mine are starting to get a little dull, so soon enough I'll have an excuse to buy a new one.

                              Thanks for this recipe! I made the crust and my toppings were Louisiana hot sauce, cheddar, feta, and parmesean! SOOOOOO GOOOD!
