DH and I love this muffin - try it with maple flavouring instead of vanilla! Normally I am not a fan of maple, but somehow it works with the slight nutty flavour of the flax. YUM!

You say this is okay for induction, but I don't see flax of any kind on the acceptable foods for induction list... so, is it? Wouldn't flax be on the nuts & seeds rung?

Sue, you are correct... flax is only legal on Induction is small amounts to relieve constipation.
Here is a post made by one of our experts, Megs, about flax:
"Flax is safe for Induction, but as I wrote the book gives specific amounts and conditions for its use during Induction.
If you look at my responses in the flax threads, I always note the uses of flax during Induction and the amounts it's to be used because people mistakenly believe flax is a "free food". It's not during Induction.
For daily fiber supplementation
Chapter 8: "I recommend that you take one tablespoon of psyllium husks daily. Be sure to select a sugar-free product. You can also take one tablespoon of coarse wheat bran or flaxseed meal."
For relief of constipation
Chapter 11: "If you are constipated, mix a tablespoon or more of psyllium husks in a cup or more of water and drink daily. Or mix ground flaxseed into a shake or sprinkle wheat bran on a salad or vegetables."
So there is a limit set forth in the book. Again, if you use the flax as a food, then the On-Going Weight Loss phase is the appropriate phase to do that. During Induction it's only used as a fiber supplement or as a constipation reliever in the amounts specified in the book."

I tried this this morning and loved it. Then I did an experiment, which worked. Baked it in a loaf pan, then sliced very thin & baked some more as you would biscotti. Nice & crunchy. Later today I will make some guacamole to have on it. I changed the recipe a tiny bit though I imagine it would work fine with the original. (and I use stevia, not splenda but that's not necessary).
Basically, I used 5x the recipe but cut one egg & used 1/4 cup melted butter, everything else the same. Baked in a buttered loaf pan at 350 for 20 minutes. Cooled a few minutes, sliced as close to 1/4 inch as possible, baked the slices 9 minutes, flipped them carefully, and baked another 9 minutes. I just had one with a little cream cheese & thought it was very good. (as long as you like flax!). It did not rise as much as in the microwave.

I did this yesterday and took another tablespoon of butter and melted it in the cup before adding the flax mixture. The muffin popped out just like a cake would from a tin.
By the way the muffin was very good!

OMG!!!!!!!!!!! These were absolutely amazingly good! I made one for breakfast this morning. I think I will start having these 3-4 times per week! I made mine in a bowl and had it on a plate while my kids had whole wheat pancakes. Each of my kids had a bite of it and they want me to make them one tomorrow for breakfast. I admit that I was quite liberal with the butter I put on top. I'm thinking of find some 0 carb maple syrup...if there is such a thing. I can't believe how full I felt after eating that. I have one question though. the original poster listed 11 gross carbs but only 1.5 net. Where did the 11 carbs come from? on my package of milled flax it lists 4 gram carbs and 4 grams fiber. Doesn't that make 1 carb for the splenda and maybe one more for the rest of the ingredients? Just want to make sure I understand how to count carbs when I make thing like this... don't want to overdo it. thanks for the great recipee!
