    I found this recipe awhile ago, but hadn't tried it so I bookmarked this thread for reference. I finally went out and bought some flax meal on the weekend and just tried your recipe like 5 minutes ago (I subbed cocoa for cinnamon though), and this was DELICIOUS!

    Mini Goals:
    Goal 1 - 10% (September 13th, 2009)
    Goal 2 - Pre-Pregnancy Weight with 2nd Child (September 27th, 2009)
    Goal 3 - 50 lbs down (December 1st, 2009)
    Goal 4 - Highest Pregnancy Weight with 1st right before c-section (February 20, 2010)
    Goal 5 - Lowest weight reached on WW after having 1st child
    Goal 6 - 100 lbs down
    Goal 7 - Pre-pregnancy weight with 1st
    Goal 8 - Weight I met my husband
    Goal 9 - 150 lbs down
    Goal 10 - Weight in Grade 8
    Goal 11 - Weight in Grade 6

      I still haven't tried a MIM. I guess I wanted to get my bread addiction way past me. I did make some coconut flour biscuits the other week so maybe I'll try one of these MIMs soon. I've read that people seem to prefer the ones made with golden flaxmeal so I'll try that version.

        I actually prefer a baked muffin ... I use my pancake recipe and make muffins from it.

        It's not as grainy as the MIM.

          A suggestion I read on another LC board was to grind the flax meal in a Magic Bullet (flat blade) or coffee grinder to make it more of a flour. Might be worth a try.

            I buy Bob's Red Mill Organic Golden ... it's already like a flour.

            I just prefer the baked muffin rather than the MiM now.
