    This was from the other board. This is especially good to get things moving again, if you know what I mean! Also very easy to do. I tried it this morning and it does work. I would spray the coffee cup with Pam first so that the muffin doesn't stick and probably add another packet of Splenda. Since it says that it nets 1.5 carbs and has 11g of carbs, I went ahead and also put in 9.5g of fiber in my calorie counter program.

    Muffin in a Minute

    Serving Size: 1

    1/4 cup flax meal
    1/2 teaspoon baking powder
    1 packet splenda packet
    1 teaspoon cinnamon
    1 large egg
    1 teaspoon butter

    Put the dry ingredients in a coffee mug. Or a bowl for a different shape.

    Stir.

    Then add the egg and the butter. Mix.

    Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately.

    Cream cheese would go nicely, too.

    Notes: 1.5 net carbs.

    Per serving: 235 Calories; 18g Fat (63% calories from fat); 12g Protein; 11g Carbohydrate; 223mg Cholesterol; 284mg Sodium

    Hmmm!! There's another one to try!

    I really like these single-serving recipes. No additional servings to polish off in the next 15 minutes.

      I LOVE these...I've been eating them 3 times a week since I started the program...they are the best.
      I use a soup mug and I don't need to spray it. DON'T forget to soak it though.
      I also put the butter in the microwave for a few seconds to melt it and then I beat the egg and butter together before mixing with the dry ingredients. I find one packet of splenda is plenty.
      Don't forget the splenda though...I did that one time and it wasn't very good...eatable but not that good...and cream cheese is very good with it.

      Thanks for sharing this with everyone...I never thought to do so...guess I'm going to have to be a little more thoughtfull of sharing my recipees...

        Thanks for the recipe, I had this one for breakfast with some butter. Very nice!

            Is this ok for induction? wow only 1.5 carbs that's it! sounds great to me.

              Yes it is. However, you need to count the Splenda against your limit of three sweeteners per day and also count your net carbs. Also, if you do use the cream cheese, you need to count that towards your cheese limit as well.

                      Just made this wonderful muffin! So easy to do and it was scrummy. A little bit too sweet for me, so I'm going to reduce the splenda next time round and I didn't have any cinamon. But wondered if anyone had put herbs in the muffins? I wonder how it would be with chopped chives? Think I may just give it a go!

                        Hi everyone - just thought I'd post a few savoury variations I've had with this muffin.

                        Cheesy Muffins - just add a small handful of shredded cheddar cheese to the mixture before placing in the microwave. This one I loved with some grilled bacon or sausage for a weekend treat for breakfast.

                        Chive Muffins - Just add some chopped chives from your herb garden (I don't have a garden, just a window box on a balcony!).
                        This is beautiful served with some goats cheese with rocket salad on top!

                        Rosemary Muffins - Add either dried rosemary or fresh if you have it to the mixture and it transforms these muffins..... wonderful on their own with butter!

                          This looks like a nice and quick to prepare breakfast muffin... but I was wondering how you came to the nutrition count you did. When I put it in Fitday (I have the PC version) it gave me:

                          Cals 309; fat 22g; carbs 18g; net carbs 6g; protein 14g.

                          Seems like 1.5 net carbs to 6 is a big difference. Fitday gave the net carb breakdown as: flax 2; baking powder 1; splenda 1; cinnamon 1; egg 1; butter 0.

                          I'd love for it to be 1.5 carbs, but...

                            I'd be interested to know that too! I took the nutrition details at the beg of the post as a given and didn't double check. Mind you I am always well under in my carbs, so even at 6 gr I should be fine......

                              I think it really depends on your own labels, like on what flax you're using etc. For example, my flax meal is high in fibre, so if I use 2tbsp of flax meal, the 2 tbsp contains 4g of carbs, and 4g of fibre....so the fibre cancels out the carbs. My eggs are listed as 0 carbs on the label, as is my baking powder.
