    I made this last night (trial and error) and it was actually pretty good. I would only make one change though.

    Sunkist tuna has come out with tuna in pouches but it is flavored (zesty lemon pepper, hot and spicy and hickory smoke).

    Recipe:

    one pouch of the zesty lemon pepper tuna
    1/4 cup of finely chopped red and green pepper
    1/4 cup mayo
    i used 1/4 cup of crushed pork rinds but I will make it next time with 1/2 cup instead.
    i also put some grated parm cheese ( the flavored one with garlic and herbs)

    mix is up very well. make 4 patties and pan fry in olive oil and butter.

    The problem i had last night with them with the orinigal recipe is that they didn't stay in true patty form. I am hoping that adding more pork rinds will help. Just flip them very easy.

    also, this is good with out frying them, just eat out of the bowl!!!

    I believe the carbs are fairly low since the rinds, tuna and mayo have almost no carbs. You need some vegs anyway!!!!!

    Wow, sound delicious, but I am a crab cakes kind of gal, am i allowed to make them with crab meat or will that throw off the carb count, I want to try to the tuna with the hot and spicy flavor but is it real tuna flavored like an awkward taste since its trying to be crab cakes
    I'm on my way to looking good in a swimsuit during my senior cruise! Wahoo!

      They make tuna in pouches that aren't flavored, too.

      I'm going to have to give this a try. I've been wanting to make some crab cakes but couldn't figure out how to get them to "stick" without bread crumbs. Thanks.

        I might consider adding a beaten egg to the recipe. When I make salmon patties, I use an egg. I think that it helps bind it all together.

        Just a thought. They sound yummie!!!

          I agree w/ Fahfee, I was going to suggest a beaten egg. Sound wonderful though and am going to try it. We have been eating alot of beef, I mean alot of beef and I am trying to switch over to more fish. Tried the Fried Fish recipe last night, it's a keeper!! And I was down 2.5 lbs this morning.

            I tried this recipe this past weekend, and it was delicious! Reminded me a lot of the salmon croquettes my Grandma used to make :yummy

            I used the "Garlic and Herb" flavored tuna instead of lemon pepper, and it was great. I did add one beaten egg and about a 1/4 cup more pork rinds to the recipe though, and didn't have any trouble keeping them in patty form.

            Thanks for the recipe, I will make these all the time now!
