I like Buffalo Wings, but I think they are alot of work for not much meat. So anyway, I love the Boneless ones, but since we can't have breading on Atkins, I decided to try to bread them w/ pork rinds. I'm sure I'm not the first person to think of this, but thought I would share...
Boneless Chicken tenderloins cut in half
Crushed Pork Rinds
Beaten Egg
Wing Sauce (hot sauce and melted butter)
Dip the chicken in the beaten egg, place in plastic bag w/ crushed pork rinds and shake.
Deepfry at 375 for approx. 7 minutes, drain and shake in wing sauce.
I tried these for the first time last night and they were AWESOME!
