I'm so tickled! I figured out this omelet that a small restaurant used to make years ago. It was so good and tasty (to me, anyway) that I was just sick when they closed up and the building was taken down (to expand the McDonalds next door.) For a very long time, I've been trying to nail the recipe. Thanks to this site, I finally did after someone indicated cumin and cayenne pepper gives a mexican flavor to foods.
The key was the tomato sauce and the spices for it. Simply adding the Taco Seasonings to taste (from Linda's site) was all it took. I poured a can of tomato sauce in a jar, added the spices, covered, and shook it up.
The Spanish Omelet from the restaurant was a two-egg omelet with green pepper, ham, and some of this sauce (two heaping tablespoons is plenty). It was topped with a couple slices to tomato. I add some shredded cheddar cheese inside my omelet and use some sour cream on top.
It's simple and just has a really nice flavor to it. And it's wonderfully filling.
