I sat here forever trying to think of something for dinner. I bought two small roman tomatoes yesterday and decided to try to make something with them. I had it for dinner, but it would also be a GREAT side dish 
I had some ricotta cheese so I thought I would try stuffing them. This is what I came up with...
Niki's Cheese Stuffed Tomatoes
2 small tomatoes - 4oz (4 carbs)
4 tblsp of ricotta cheese ( 3 carbs)
1 tsp Italian seasoning (0 carbs I THINK...unsure so if someone knows please let me know
)
1 tblsp Parmesan Cheese (0 carbs)
salt and pepper
1 oz swiss cheese (0 carbs...mine says 0 but you may want to make it 1 carb to be safe)
I cut the tomatoes in half and removed the middle. The I mixed in a small bowl the Ricotta, Italian Seasoning, Parmesan Cheese, salt and pepper. I stuffed the tomatoes then placed a small piece of swiss on top of each piece (mozzarella would be really nice too). I broiled them for 5-7 minutes, until cheese is a little brown and bubbly.
