I found this recipe online and it was DEEELISH!!!
Homemade Egg Rolls
2 large eggs
1 cup Cabbage (or a half cup...it's up to you. I used the packaged coleslaw)
Soy Sauce, low sodium (to taste...I used about a table spoon)
1 tsp olive oil
5 Spice (optional...it's a spice in the Asian section, but you don't need it at all)
1 tsp Hot Mustard, Chinese style
Heat a little olive oil in frying pan. Throw in cabbage and splash of Soy Sauce. Add pinch of 5 spice if desired. Cook cabbage down. Beat 2 eggs
Pour into another greased frying pan. Make it like an omelette. Once cooked lay egg on a plate, and put cabbage mixture in it. Roll up. Cut in half. Serve with Hot Mustard and or Soy Sauce. Enjoy!!!
Before I rolled it...

After...

Did I tell you guys it was DEEEELISHHH!!!

The carbs are a little less if you use less cabbage, and if you don't use the Hot Mustard. The Hot Mustard I used is 1 carb per teaspoon.
