This is a rich entree that makes you happy that you are on Atkins and not a low fat diet. I think this should be okay for induction but please count the carbs as you prepare it.
1 lb filet of beef (sirloin also works)
3 tbsp butter
1/4 cup mushrooms (1 cup usually but we got to watch those carbs!)
2 tbsp chopped green onion
1 tbsp red wine vinegar
1 tbsp capers
1/4 cup sour cream (1/2 cup usually but sour crm is 1 g carb per 2 tbsp)
1 tbsp dried dill (if fresh, double amount)
1/4 cup water
Salt and Pepper to taste
-Saute beef in in skillet in 1 tbsp butter and S&P to taste. Be careful not to overcook, this should be served medium rare to medium-well.
-Mix remaining butter, mushrooms, onions, and capers into the skillet until mushrooms are soft.
-Add all remaining ingredients and simmer for 5 minutes. Enjoy!
