Just got back from beach trip and we adapted our traditional Maryland-style crab cakes to low carb style!! With less than one carb each, these are suitable for induction, delicious, and easy!!
1 lb lump crab meat (high quality canned or fresh)
2 egg
2 tsp Worcestire sauce
1/4 tsp dry mustard
1 tsp Old Bay seasoning
1.5 cup smashed pork rinds
2 tbsp minced scallions
2 tbsp mayonnaise
1 tsp lemon juice
1 tbsp mustard
1 tbsp melted butter
2 tbsp parsley flakes
In mixing bowl, combine all ingredients except crab meat. Gently fold in crab meat, careful not to break up lumps! Shape into about 8-10 cakes. Refrigerate x 2 hours or so to let cakes firm up. If pan frying, be GENTLE, they break apart easily, and fry on medium heat for 3-4 minutes each side. If baking, place in greased pan and broil on 425 degrees for 8 minutes each side (crispier outside) or bake at 375 for 18-20 minutes (soft crab cakes). DELICIOUS!!!!
You can also add 1-2 tbsp actual bread crumbs to help them stick together better, if you are on a higher rung, but that would make them off limits for induction.
Dill Sauce to go on the side:
Mix 1/2 cup mayonnaise with 1 tbsp dill and 2 tsp lemon juice.
