I just made this (I've never made any kind of fried chicken before), and it was so good that Michael even ate it...lol. That says A LOT!!! I just threw some ingredients together and WhaLah!!! Here's what I came up with...
Niki's Coconut Fried Chicken
INGREDIENTS
3/4 to 1 lb Chicken Breast, Boneless, Skinless
1 egg
2 tbsp Coconut Flour
2 tbsp Parmesan Cheese
1 tsp McCormick Original Chicken Seasoning
Oil
Salt and Pepper (if desired)
DIRECTIONS
In one bowl beat egg. In another bowl mix, Coconut flour, Parmesan cheese, and McCormick Original Chicken Seasoning. Dip each piece of chicken into egg then coat with Coconut flour mixture. Put in heated frying pan with oil. Fry for 10-20 minutes (depends on how big chicken pieces are). When finished you can eat it plain, or dip it in hot wing sauce and serve with blue cheese dressing. The nutritional info is without the hot wing sauce and blue cheese dressing.
I tried one piece dipped in Franks Hot Sauce with a little butter melted into it, and the other piece I ate plain. They were both DELICIOUS!!! Next time I may add a little more of the McCormick Original Chicken Seasoning.
